My partner and I have been blending more soups with healthy vegetables this season and let me tell you it is working for my diet full time x 1,000,000.
I’ve spoiled myself today with a dish for breakfast that is a little bit junky, but I feel a little less guilty about it with planned soup and naan bread for lunch.
If you’ve been to Mexico and you haven’t tried their Mexican street corn I think you should book a ticket from wherever you’re reading this and enjoy your next meal in a Mexican food court. It’s hot corn in a cup covered with mayo and cheese, and some other toppings if you wish. Their version of the all American hotdog. Sounds a bit too much but I assure you it hits the spot.
My recipe uses two ears of corn and two types of cheese, I season with salt, pepper and 1/4 of fresh lime juice. You have my permission to skip on some calories by using 1 ear of corn, and less of everything dairy.
I’ll warn you that my way is more satisfying and filling, which justifies the work involved to make the dish, and as long as I push my hard boiled egg later into my day in my snack category everything adds up nicely at the end of the day.
So below are the calories for my Mexican street corn recipe, which in persian culture they call zarat mexici, and what I consider a fulfilling treat.

If you make this, you melt everything together in your favourite pan and your tastebuds drool into the future taste of what your nostrils smell searing.

I think it’s important to mention to you that cheat day was Sunday, I went over by 2173/1600 but I’m still under my count so far this week because of all of the soup. Monday I was 1399/1600 which is too low for my taste, I feel I could have maximized my calories more. Yesterday I was just under 1561/1600.
It’s all a process, as I always say it’s far from linear, and we need to give ourselves to permission to live our lives a little and have a treat in moderation.
